Jean-Paul Hévin-style pancakes

Jean-Paul Hévin reveals his recipe to you!

Out of the question for Jean-Paul Hevin to miss Candlemas, this traditional celebration which brings family and friends together around pancakes. Also, on this occasion he reveals to you the secrets of his pancake recipe but also of his chocolate sauce :-) To be enjoyed without moderation.

Recipe for 4 people

Pancake batter

220g flour

80g caster sugar

2g of salt

3 eggs

500g of whole milk

100g brown butter

1 orange

Mix the sugar and eggs (2 eggs + 2 yolks). Add the milk then the salt.

Zest 1/3 of an orange.

Sift the flour and add the liquid mixture in 3 batches, mixing well each time.

Make a brown butter and add it to the previous mixture at 40°C.

Leave to rest for 1 hour. Cook the pancakes using a quality pan.

 

All that remains is to garnish with Jean-Paul Hévin spread, a homemade chocolate sauce or to grate a chocolate bar on the still warm pancakes!

 

Chocolate sauce

100 g of 53% cocoa chocolate pastilles

100 g of whole milk

Melt the chocolate in a bain marie. Warm the milk and add it to the melted chocolate. Mix using a spatula until the sauce is smooth.
